I had a similar problem. I ended up removing the t'stat. I live in S. FL, so heat is not an issue.
You could have an air pocket, and without the bleeder working it will be a bit tough to remove.
I too had the guage problems. I eventually went out to Discount Auto Parts and bought one of their $15 temp guages. Works without electricity. I've had one ever since.
Hate to tell you this, but the eventual solution to the problem was a valve job. The head was warped.
If you decide to try removing the t-stat, you need to do it properly. You can't just remove it. There is a bypass hole that the bottom of the t'stat closes. you need to plug this hole. i used a 1" rubber freeze plug. All you have to do is trim it a bit to fit, and bolt it in. Car will run cooler than ever before.
Remove the t'stat cover. Looking straight in you'll see the hole. If you don't plug this thing the water will go through the bypass, and the car will actually run hotter, than with the t'stat.
