It's hard to diagnosis things without being there but it sounds like your clutch master or slave cyl. is bypassing . I usualy like to replace both at the same time but if I was a betting man from what your saying I would guess the master . check for fluid leaking at either part (if you find brake fluild then you know which one is leaking )
