I guess I wouldn't do the MM head. I really don't think the surface turbulance would add much performance. As for it eating M cars/Mustange GT's/Porches.... That guy's on acid. Even if you had a high compression euro 3.5l w/MM head and schrick 282 cam you might make 260hp or so. Not exactly eating a 300hp older 930 turbo or even a 255hp 88 M5. Sure it might be a closer match on the track... but alot of that is drivers skill too.....
First choice is option #3 (assuming you trust the shop doing your cars head work) the new casting with used euro cam. The euro cam is a 272 duration spec and will probably make 10-15hp less than the used Schrick.... but look closely to make sure the stock cam is still good. They do wear out!
Second is having Redline do it. Good rep shop.
