It depends on the rating, stock is 80C, but 70 and 75 are also available. The rating is stamped on it somewhere, I think usually kind of on the bottom "pad" that moves out. 80C translates to 176F. I for one don't feel that using a lower temp stat will make it run cooler if it is overheating as it will rapidly climb well past 80C anyway so it doesn't have any effect.
