Older brake fluid has absorbed water which lowers the boiling point. On a hilly sprint, you can boil fluid and that is the end of your brakes until they cool down. You might even have to bleed them.
So, change your brake fluid completely. I use the Castrol "low moisture something" variety. There are some high-temp ones out there too.
