the porting of the exaust allows the gas to excape more quickly. Thus increasing flow in a restricted area. You NEVER want to remove too much materal because there are water jackets around the ports. basicly you want to GASKET match your exaust ports. Any more then that and you will never have a proper seal on the manafold. Also your manafold is set to the gaskets. Thirdly any steps in the exaust causes air turbulence and it slows down the air. This is a job for somone with experence due to the potenchal damage. When most people learn how to do it they cut a damaged head in half so they can see were the ports run.
On my M30 big valve I had it done and am very happy. See the pics.
