It will run a tiny bit richer, but hardly any with a 71 stat. 528i's don't stay in warmup mode that long so it isn't like some cars that really need a higher temp stat. It doesn't really hurt anything, but it doesn't help anything eiher. Contrary to popular belief, it doesn't help prevent overheating. If it is marginal on overheating, it will already be over the 80C mark and fully open. And if it doesn't have an overheating problem, why bother? Biggest fallout is the heater won't work quite as well, but still, no major difference.
