Hey DMS --- I'd love to see your car which is lowered and sporting 17" wheels. Do you have any pics to share?

Nice. I like the stealth look.
Did you have to roll the fenders due to your large wheels? I'm assuming you don't need to roll fenders solely because you lowered it?

Nope only for the combo. Without the wide wheels it wouldn't be necessary.
Sway bars

I've got a 1981 528i, and I want to reduce the body roll and improve cornering. I'm thinking sway bars are the place to start. What size should I get, and where do I get them?

Don't rely on just a coupla people's opinion! And, they will be very helpful, but, go to the FAQ section to find what you need.
These people will offer what they know, of course, but, some are more race knowledgeable than others.
